UV absorption spectra of collagen in the presence of plant stability agents
Abstract
Collagen is a triple helix protein that has three special amino acids, glycine, proline and hydroxyproline. Collagen stability is an important to maintain collagen quality. Some stabilization agents are recommended to maintain the quality of collagen extract, like from tomatoes, roses and honey. The objective of this research was to observe UV spectra of collagen extract from Channa striata in the presence of tomato extract, rose distillate, rose extract and honey. The results show that the presence of tomato and rose extracts, rose distillate and honey can change UV spectral of collagen compared to collagen extract alone. The presence rose distillate resulted in the product conformation most nearby collagen extract before and after 24 days of storage. So, rose distillate is the best stability agent among them to maintain the quality of collagen.
