Development of marine foods in Indonesia
Abstract
Many coastal communities in Indonesia are dependent heavily on marine foods and the oceans. Among the vast diversity of marine biological resources found in Indonesian water, seaweed and sea cucumbers are potential marine commodities harvested within the country. More than 900 seaweeds species and 300 sea cucumbers species have been recorded in Indonesia. In addition, there has been a significant increase in the development of marine-based food products in Indonesia. For example, seaweeds were utilized as the main ingredients, substitute material, or food additives in various food products. Large number of studies have demonstrated health benefit effects of marine foods. Sea cucumbers have long been used in traditional Chinese medicines due to their healing properties for skeletal and joint pain, constipation, urinary problems, and certain cancers, therefore, sea cucumber also known as "Haishen" or ocean ginseng. The appropriate processing method of sea cucumber will enable beche-de-mer to have longer shelf-life, better texture and taste, and highest price. In this paper, we introduce marine foods in Indonesia including marine floras and faunas. The information's presented in study can provide the foundations for the sustainable explorations and diversification of marine floras and faunas for foods. The diversification of marine flora and fauna as marine food products further will encourage marine food consumption which may contribute to a transition of healthy diets, nutrition, and food security.
