Non-ideal phase behaviour of binary mixtures of triglycerides with mono- and diglycerides
Abstract
Non-ideal miscibility in the liquid phase of mono- or diglycerides with triglycerides is described in terms of thermodynamic excess functions. The heat of mixing and the solubility temperatures of several ideal and non-ideal binary glyceride mixtures are measured. The non-ideal phase behavior of glyceride systems reported in the literature is satisfactorily predicted, which indicates that the excess functions are generally applicable to mixtures of mono- or diglycerides with triglycerides.
